A production gateway is more than a modem attached to a microcontroller.

Start at the field interfaces
List the equipment protocols, electrical interfaces, update rates and environmental constraints first. CAN, Modbus, RS485, BLE and digital/analog signals create different hardware and software requirements.
Separate field reliability from cloud connectivity
The gateway should continue to collect, buffer and manage local state when the network is unavailable. Connectivity failure should not become equipment failure.
Design identity and provisioning early
Manufacturing-time identity, certificates, SIM/eSIM handling, cloud onboarding and ownership transfer are easier to solve before thousands of devices exist.
Treat OTA as a product feature
Firmware and software update paths need versioning, recovery, rollout control and observability.
Operate the fleet, not only the device
A useful device cloud needs health, connectivity, versions, alerts, logs and remote diagnostics—not only telemetry charts.
